We are honored to announce that EDA Wagyu is now featured at Hinokizaka, the acclaimed Japanese dining venue on the 45th floor of The Ritz-Carlton, Tokyo, offering breathtaking skyline views and four dedicated dining styles—kaiseki, sushi, tempura, and teppanyaki.

On the Kiri (¥32,000) dinner course, guests can savor a signature dish of Miyazaki EDA Wagyu “Rump Cap” (Ranchi) paired with zunda miso, seasonal vegetables, and summer truffle. The course also features a Chef’s Wagyu selection of fillet (60g) or sirloin (80g).
For those seeking the ultimate experience, the Hinoki course (¥50,000, incl. tax & service) presents the pinnacle of Japanese gastronomy—combining kaiseki, teppanyaki, tempura, and sushi in one sitting, with seasonal opportunities to enjoy EDA Wagyu at its best.
Under the expertise of Chef Yuki Oe, Teppanyaki Chef de Cuisine, EDA Wagyu has been embraced since 2025 for its clean umami, elegant marbling, and lighter finish compared to conventional Wagyu.
Raised without hormones or additives and nurtured through circular farming, EDA Wagyu is EU-approved and represents less than 1% of Japan’s Wagyu production, ensuring rarity, safety, and traceability. To taste the true refinement of Wagyu in one of Tokyo’s most prestigious settings, we invite you to experience EDA Wagyu at Hinokizaka, The Ritz-Carlton, Tokyo.
